It all began in Rouen, at the Institut National de la Boulangerie-Pâtisserie (INBP), where Jean-François Feuillette earned his masters degree in pastry making. He then honed his skills at prestigious establishments such as Pierre Hermé and the George V in Paris, before taking over a neighbourhood bakery in Blois: Le Théâtre du Pain. Quickly recognised for his macarons, he created a new model combining baking excellence with the charm of a tearoom. Now managing more than 100 establishments, with 20 new openings planned for 2025, the founder now looks abroad, with a new establishment set to open in Houston, USA.
